Stir Fry Sauce

2 Tbsp unsweetened coconut milk
1 Tbsp nama shoyu (OR low sodium soy sauce, tamari, braggs/coconut aminos)

1/2 Tbsp sesame oil (OR extra virgin olive oil)

First, mix all the Stir Fry Sauce Ingredients into a bowl and set aside.
Place veggies in a bowl with the stir fry sauce and let soak while you prepare the rice.
Place cauliflower and garlic into a food processor (or blender it just might be a little trickier) and pulse until desired rice look. Add scallions and pulse a couple times.
Place rice in a bowl and pour stir fry vegetables on top and enjoy!
