Method
- Stir together the ingredients in a bowl until they form a moist dough.
- Press into a tall cookie mold or cupcake paper and put in the freezer.
- Blend the mango and berries together, adding a tiny amount of coconut milk if needed. It should be like sorbet but we are calling it ice cream… shh.
- Spread a bit on top of your cookie and put back in the freezer until the ice cream is solid.
- Whisk together the ingredients until smooth.
- Pour over your frozen ice cream and once more put it back in the freezer until the chocolate hardens, it’ll take 30 minutes or so. Enjoy:)
