Method
- Place all the base ingredients into a food processor and run until sticky mixture is formed. Press the mixture in the bottom of a cake tin and set aside.
- Place all the filling ingredients into a food processor and run until smooth. Spread the mixture over the base and pop the cake in the freezer.
- For the icing mix all the ingredients together using a spoon or a fork. If your coconut oil is liquid, put the icing mixture in the fridge for few minutes to firm up.
- Spread the icing mixture over the cake and pop the whole cake back in the freezer to set. When set, cut into slices and serve! Enjoy!
