Sometimes the simple things in life are the most wonderful. A little cucumber, some onions, a splash of coconut milk, and a dash of spices. Particularly nice on a warm summer afternoon, but great any time of day or year!

  1. Using a mandolin or knife, slice the cucumbers and onions into ⅛" slices. Place them in a large bowl.
  2. Add the remaining ingredients and toss together.
  3. Store in the refrigerator for up to 7 days.
