Summer is just around the corner! It’s never too early for popsicles. Unlike what often passes for a popsicle, these delicious treats are wholesome and healthy! It’s a snack that will actually nourish you, full of fruit, almond milk, and coconut!
Pomegranates and persimmons are two slightly out-of-the-ordinary fruits for the Western palate but are still easy to find. They’re right in that sweet spot between unusual and common that makes them exciting without being threatening. While they can be a bit trickier than your average apples and oranges (persimmons need to be super, super ripe and pomegranate seeds are just so tricky to get at!) the little bit of extra effort is completely worth it. They are really two of the most interesting and delicious fruits.

If you’ve never tasted a well-ripened persimmon, then you simply don’t know what you’re missing. If tasted before they have had a chance to get really, really ripe — we’re talking almost fermented, even — persimmon is aggressively astringent and unpleasant. But as the fruit matures and the tannin levels are reduced, it becomes one of the sweetest and most incredible tasting fruits you’ll find anywhere. But it does take patience! You have to let the persimmon ripen until it becomes so soft it is squishy. Which makes it ideal for dressings!
As always, ginger provides a lovely spicy foil for the sweetness of the persimmon dressing. Give it a try!
